Eat Love Savor: Caviar, Crab and Avocado Tower

Ingredients:

  1. 5 ounces fresh Dungeness crab
  2. 1/2 teaspoon finely minced shallot
  3. Dash of paprika
  4. 3/4 teaspoon fresh lemon juice
  5. 1 large ripe avocado
  6. Sea salt and freshly ground pepper to taste
  7. 4 ounces Black River Caviar (try our Hackleback)

Directions:

  1. Carefully combine Dungeness crab, shallots, paprika, half of the lemon juice, and salt and pepper to taste in a small bowl.
  2. Cut the avocado in half, remove pit, and spoon the flesh into a small bowl.
  3. Mash the avocado with a fork. Add the other half of the lemon juice to the smashed avocado, and add salt and pepper to taste.
  4. To serve the towers, begin with a 3″ flattened mound of smashed avocado on each of four plates.
  5. Divide the crab into 4 servings and form a layer of crab on top of the avocado on each plate.
  6. Using a spoon, top each layer of crab with a second mound of avocado and flatten.
  7. Finally, spoon 1 ounce of Black River Caviar on top of each tower.  

Serve immediately
