Sweet Potatoes with Caviar

Food Network's: Sweet Potatoes with Caviar

Ingredients:

  1. 2 Sweet Potatoes
  2. 2 Tablespoons of chopped Chives
  3. 1/4 cup of Creme Fraiche
  4. Caviar

Directions:

  1. Slice 2 sweet potatoes into 1/8-inch-thick rounds.
  2. Brush with olive oil and season with salt and pepper.
  3. Bake at 425 degrees F until crisp, about 15 minutes, then cool on a rack.
  4. Mix 2 tablespoons chopped chives with 1/4 cup Creme Fraiche
  5. Dollop on the potatoes and top with caviar.
