Truffle Shuffle: Soft Scramble And Caviar

INGREDIENTS

6 eggs

2 tbsp butter (for toasting brioche)

2 tbsp butter (for eggs)

2-3 tbsp Sour cream

1½ tbsp Balinese Truffle Salt

1 oz Imperial Golden Osetra caviar

1 jar Truffle Carpaccio

4 slices La Boulangerie croissant brioche

1 bunch Chives

INSTRUCTIONS

1. Preheat oven to 325F.


2. In a non-stick pan, melt 2 tbsp butter on medium-low heat until foamy.


3. Toast brioche slices on both sides until golden brown; remove from the pan and transfer to an aluminum foil-lined sheet tray and place in oven to keep warm.


4. Crack 3 of the eggs into a small bowl, add 1 tbsp of water, and whisk until combined. Season with Balinese Truffle Salt.


5. Pour the beaten eggs into a 2-quart pot, add 1 tbsp of butter, and cook over medium-low heat, whisking constantly until small, soft curds form.


6. Remove pot from the heat and add 1 tbsp of sour cream or crème fraîche, and mix until combined.

8. Plate the soft scrambled eggs along with two slices of toast. Top with 1/2 oz of Imperial Golden Osetra caviar, garnish with diced chives, and additional Balinese Truffle Salt to taste.


9. Clean pot before repeating steps 3-7 with the remaining three eggs. Enjoy!
