Recipe by: Chef Bonnie Morales from Kachka
INGREDIENTS
½ tsp nutritional yeast flake
1 tsp onion flake
½ tsp sugar
⅛ tsp diamond crystal kosher salt
½ tsp onion powder
¼ tsp porcini powder
½ cup creme fraiche
1 tbsp milk
2 oz Salmon Roe
1 tbsp sliced chives
1 tsp “everything” spice
INSTRUCTIONS
1. Combine yeast and onion flakes in a grinder. Grind into powder.
2. Combine with onion powder, salt and sugar.
3. Whisk into crème fraîche and add milk. Whisk until just combined. Add more milk if a looser consistency is desired.
4. Transfer dip to a small, shallow serving bowl or plate with a rim, and spread out evenly. Pile the salmon roe in the center of the plated spread. Carefully, working outwards from the center, spread the salmon roe in an even layer on top of the spread, leaving a halo of dip visible at the edges.
5. Sprinkle chives and “everything” spice all over the roe. Serve immediately.
6. Serve with bagel chips, pita chips, or ridged potato chips.
