Founded in San Francisco by sisters Petra and Saskia Bergstein, The Caviar Co. grew from a shared vision to rethink how caviar fits into modern life. With deep respect for tradition and a desire to surprise and delight, today they are a trusted purveyor bringing exceptional caviar and roe to moments from Michelin-starred dining rooms to rooftop parties—putting roe where it’s never been and where it absolutely belongs.

OUR MISSION

The Caviar Co. mission is to provide an unsurpassed caviar collection with quality, integrity, and sustainability. With aquaculture and sustainable sturgeon farming methods, we are able to avoid impacting the wild sturgeon species so that it may continue to grow and flourish as it did once before. Through these methods, we feel that we can contribute to promoting sustainable farming practices as well as educate others on aquaculture.


Our business is built on three core commitments: sourcing only the highest-quality caviar, fostering education about this timeless delicacy, and championing sustainable farming practices. While tradition and culture are deeply rooted in caviar’s legacy, we embrace innovation to redefine how this luxury is enjoyed. Our mission is to make caviar not only an indulgence but a lifestyle—more accessible, celebratory, and part of enhancing the everyday.


We prominently display the Trident as a symbol of the power and bounty of the sea, as it is closely associated with the Greek God Poseidon and their Roman equivalent, Neptune. The fork of our Trident alludes to our San Francisco roots, echoing the form and palette of the beloved Golden Gate Bridge.
