Whipped Ricotta Toast

Simple yet indulgent, this whipped ricotta toast topped with caviar is sure to become a standout in your morning routine.

INGREDIENTS

12 oz Bellwether Farms Ricotta Cheese

6 tbsp honey, divided

Large pinch kosher salt

Zest of 1 lemon

2 tbsp crème fraîche

4 slices rustic white or multigrain bread

4 crème fraîche butter

1 oz Hackleback Caviar

INSTRUCTIONS

1. In a food processor, combine the ricotta, 4 tablespoons of honey, salt, and lemon zest. Blend on high for about 30 seconds, until smooth and creamy. Gently fold in the crème fraîche, then transfer the mixture to a piping bag.


2. Slice the bread and generously butter each piece. Toast under a high broiler until golden and crisp to your liking.


3. Pipe a generous amount of the ricotta mixture onto each toast. Drizzle with a touch of honey, then top with a few bumps of Hackleback Caviar. Enjoy!
