Caviar & Pimento Cheese Fritters

In collaboration with Callie's Hot Little Biscuit, this dish makes the perfect appetizer or snack to wow your dinner guests. Frying up the pimento cheese creates a delicious melty, yet crunchy vessel to carry the salinity of the caviar and herby taste from the fresh chives.

INGREDIENTS

Callie's Hot Little Biscuit 12 oz pimento cheese

1 cup of flour

1 tbsp corn starch

Salt and pepper

2 eggs

1 cup fine breadcrumbs

2 cups vegetable oil

Chives

1 oz Kaluga Hybrid Caviar

1 oz Classic White Sturgeon Caviar

INSTRUCTIONS

1. Use your hands to ball and separate 12oz of pimento cheese into 8-10 discs.


2. Place discs in the freezer for 30 minutes.


3. While freezing the discs, heat oil in a pan to 340-350 degrees. I prefer Canola oil.


4. While your pan is heating, create your dipping station. In one bowl, mix flour and cornstarch with salt and pepper. In the second bowl, whisk two eggs. In the third bowl, mix fine breadcrumbs and salt and pepper.


5. Remove the pimento cheese discs from the freezer and carefully dip each disc into the flour mixture, the egg mixture, and the breadcrumb mixture.


6. Gently place the coated pimento cheese discs into the oil. Note: only place 3 or 4 discs at a time to not overcrowd the pot.


7. Cook until golden brown. Remove from the pan and place on a wire rack or paper towels to let the oil drain.


8. Top with Classic White Sturgeon caviar, Kaluga Hybrid caviar, and fresh chives. Enjoy!
