Caviar has a reputation. It's the luxury accessory of fine dining: fussy, refined, a little over the top. But we totally disagree.
At The Caviar Co., we do things differently. We’ve earned a reputation for being rule-breakers in an industry built on tradition. Everyone knows the usual suspects when it comes to caviar pairings: blinis, cucumbers, Champagne, vodka—and if they're feeling wild, potato chips. As if that’s supposed to blow our minds.
We’re here to offer something a little more unexpected: our most daring pairings. Some have come from Michelin-starred chefs. Others were born in a haze of late-night creativity after one too many glasses of Veuve. All of them break the mold in the best way.
Fried chicken and Classic White Sturgeon caviar
Let’s start with the one that’s already making the rounds on social media: fried chicken and caviar. And yes, it’s absolutely delicious. It's the perfect combination of crispy, greasy, salty, and briny. You can dress it up or keep it casual. Even a humble chicken nugget becomes elevated with a dollop of caviar. Our go-to is Classic White Sturgeon. Buttery, subtly briny, chef’s kiss.

Ice cream and Hackleback caviar
Now, the pairing that really turns heads: caviar and ice cream. Stay with us. Our favorite version is strawberry ice cream topped with a spoonful of Hackleback. We’ve tested it with Humphrey Slocombe’s Strawberry Blondie, and even whipped up our own house-made crème fraîche-strawberry ice cream. Think salted caramel, but fancy. It’s strange, it’s sweet, it’s salty…and it works.
White sauce pizza and Siberian Sturgeon caviar
Another late-night revelation: white sauce pizza. One night, after a few too many pours, we tossed Siberian Sturgeon over a bubbling Napoleon-style pizza layered with spinach and oyster mushrooms. Indulgent? Absolutely. Excessive? Possibly. Everything pizza night should be? Without a doubt.

Cocktails and Caviar
And then there’s drinks. We love Champagne and vodka as much as the next caviar purist, but let’s take it further. Enter tequila and rum.
These are harder to pair, but when it works, it really works. Royal White Sturgeon with Reposado tequila is a game-changer. Ditch the salt rim and do a bump of Royal instead, trust us. If tequila feels too fiery, rum is its smoother, moodier sibling. Sip a dark, molasses-rich rum alongside Kaluga Hybrid, and you’ll hit something smoky, sweet, and oceanic all at once.
So no, we’re not here to disrespect tradition. We’re just giving it a little side-eye.
These unexpected pairings are your reminder that the best bites don’t always follow the rules. Sometimes luxury is fried, chilled, melted, or poured over ice. And sometimes, the best way to enjoy caviar is with your fingers, a few close friends, and a very strong drink in hand.
